La Cuvée Folie is a still white cuvée. Our answer to the crisp white wine that opens a meal and makes the table feel complete.

Built on verbena, neroli blossom, and pear, it is mineral, floral, and layered. It occupies the same emotional space as wine: that first glass, that softening of the afternoon, that sense that time has slowed.

AROMATIC PROFILE

The nose opens with ripe white stone fruit. Pear, peach, lifted by citrus and a thread of minerality that recalls wet stone.

On the palate: fruity acidity, the brightness of Amalfi lemon, saline notes that nod to the coast, and a finish that carries just a whisper of brioche.

The colour is a soft cream-lemon yellow, touched with dusky orange, like late light through linen.

THE CREATION

Our most architectural creation. Every element placed with the care of arranging objects in a room. The verbena provides structure and acidity; the neroli blossom adds the floral perfume that lifts the mid-palate; the pear brings roundness and body. No single botanical dominates. The assemblage rests for a minimum of thirty days, during which thousands of molecules find their equilibrium.

THE PERFECT PAIRING

Pour 125 ml, well-chilled, into a proper white wine glass.

No ice. This is a liquid that deserves a ceremony.

Present the bottle. Let the guest hold the glass to the light. The colour alone tells a story.

GENERAL SUGGESTION

La Cuvée Folie is a natural companion for the white vegetables of spring.

Asparagus with hollandaise, braised chicory, a simple plate of artichoke hearts. It pairs beautifully with poultry, white fish, and shellfish, particularly when prepared with butter and citrus.

A young hard cheese, comté or Gruyère, makes a lovely informal pairing at the end of a meal.
