Pomelo Asada carries fire in its memory.

Inspired by the Mezcal Paloma, it begins with roasted jalapeño and ancho chili, smoked, charred, and distilled, then layered over the bitter fruit of grapefruit.

Heat, depth, and a smokiness that lingers the way embers linger after the flame has gone. This is a drink with weight.

AROMATIC PROFILE

The nose is unmistakable: smoke, grilled peppers, the charred edge of something just pulled from flame.

On the palate, grapefruit bitters arrive first, fruity, almost resinous, before the smokiness builds beneath like slow-burning wood.

The finish is warm and long, with a gentle spice that arrives late and stays. Deep and grounded.

THE CREATION

We roast and smoke the peppers ourselves before distillation.

The challenge was capturing smoke with lightness, fire with grace. The grapefruit acts as a structural counterweight, its bitterness anchoring the composition and keeping the whole thing honest.

THE PERFECT PAIRING

Pour 110 ml into a tumbler filled with ice.

Garnish with a dried chili pepper or a Hoja Santa leaf; the leaf adds a faint anise note that deepens the experience.

Serve at a moment when the table is ready for something bold.
