Wakataya is an act of botanical translation.

The Peruvian herb huacatay, sometimes called black mint, transplanted to Belgian soil and reimagined through distillation.

The result is a sour-style apéritif of startling herbal intensity, alive with acidity and freshness.

AROMATIC PROFILE

The nose is immediate and generous. Basil, fresh mint, a green so vivid it almost has colour.

On the palate, the huacatay reveals its complexity: herbal, almost mentholated, with the brightness of lime and a persistent peppered finish from black pepper and tarragon.

The acidity is high and clean, recalling the Pisco Sour that inspired its structure.

THE CREATION

Huacatay does not grow naturally in Belgium. We cultivated it slowly, across several seasons, learning the herb's needs before it yielded the aromatic depth we required. Building a sour around it felt like the most honest way to honour its South American roots while grounding it in our terroir.

THE PERFECT PAIRING

Pour 110 ml into a tumbler full of ice.

Garnish with a lime wedge or a huacatay leaf. The choice of garnish shifts the emphasis, from citrus to herbal to peppery.

Present the bottle. Let the cloudy herbal green of the liquid do the talking.

GENERAL SUGGESTION

Wakataya was conceived for the flavours of the Pacific coast. Ceviche, tiradito, Nikkei cuisine in all its cross-cultural brilliance.

It pairs beautifully with tempura, where its acidity cuts through the batter's richness, and equally with a simple plate of raw fish dressed in ponzu.

After dinner, it works as a slow-sipping digestif. A green delight to close the evening.
