Opal Blanc is a sparkling cuvée, and our first limited edition. Our answer to the glass of champagne that marks an occasion: the toast, the arrival, the last hour of the year.

Built on rose, neroli, and huacatay, lifted by Chardonnay grape and lime, it is floral, bright, and quietly spiced. Released in a single run of 1000 bottles, it is offered only to our gastronomy partners and to members of the estate.

 

AROMATIC PROFILE

The nose opens with neroli blossom and rose petals, lifted by bright citrus zest and a delicate floral lift.

On the palate: lemon verbena and crisp Chardonnay grape, a refined herbal freshness, and the snap of fresh lime, carried by a fine, persistent mousse.

Beneath it, the notions that make it Opal: huacatay, an Andean herb with an earthy, faintly anise-like edge; roasted cacao; a gentle pepper spice. The finish is dry and lingers softly.

The colour is pale gold, catching the light the way its name suggests.

THE CREATION

Three distillates form its heart: rose for elegance, neroli for perfume, and huacatay for the unexpected. Sweetness comes from Chardonnay grape; tension from verjus, the juice of unripe grapes, and from lime.

Delicate yet full-bodied, sparkling yet substantial. Each bottle is wrapped by hand in paper and closed with an embossed monogram seal.

THE PERFECT PAIRING

Pour 125 ml into a generous white wine glass. No ice, no garnish.

Serve well-chilled. Present the bottle at the table, label facing the guest. Let the liquid speak first.

GENERAL SUGGESTION

Opal Blanc belongs at the start of a meal: ceviche, grilled sea bass or salmon with a light citrus dressing, a vegetable carpaccio with citrus oil.

It holds its own against gentle spice, such as Thai basil or a Peruvian leche de tigre, and alongside roasted white meats with herbs.

With cheese: fresh chèvre or an herbed brie. At the end of the meal: white chocolate with citrus or herbs.
